the car jumps around at higher speeds because the wheels aren't perfectly balanced.

there are 2 ways

1) you could make a transparant circle behind the wheel with the exact same size
give the actual rims + tires a low density

2) do as i do: make a lot of different sized circles, and make the rim on top of it (download one of my cars to see what i mean)

just take a look at some other scenes to see how they did it
